can i still start a career of my choice at my age?

why is it that some company's discriminate against age when it comes to choosing someone. i am 30 years old and i look like i can pass for early 20's. i want to have a job that has a creative side to it and two i have in mind are set DESIGN for theater/actress, or floral DESIGN for special occasions. how do i get started in this Business without spending my life savings to just be put back on the same road on starting over? where do i start esp when i live in houston texas where there is not a theater on every corner not like LA or NY...anyone know?
